Desi food : Chamki Roti

Every morning we find that some of the flat bread ( Roti , phulka , puri ) from last night is left over. What do we do ?  give it away to the poor, throw it ( we should not trow away food !!! ). May be a few eat it unwantedly.

Here we have a recipe for you with the possible easiest solution for the problem.

                         Roti ko Chamak do ........!!

Well most of you might know and for those who don't know that                " Chamakna "its just a version of stir frying with spices.

Ingredients required :
  1. left over flat bread / bachi hui roti. 
  2. oil
  3. spices - turmeric powder , coriander powder , red chilli powder , mustard seeds . etc
  4. left over gravy / curry if any
  5. Curd - Dahi.
  6. salt
  7. fresh green chilies
  8. coriander leafs
  9. onions

    The making :
    • Heat up the pan in medium heat
    • Add 4 tablespoons oil.
    • let the oil heat up.
    • add pinch of mustard seeds
    • add fine chopped onions ( fine and long chopped )
    • add chopped green chilies
    • stir fry and turn them to golden or brown ( your taste choice. I like between golden and brown )
    • add turmeric powder . 1 teaspoon
    • add coriander powder. 2 teaspoon
    • add red chili powder. 1 or 1/2 teaspoon.
    • mix them all well.
    • once you feel that the spices are cooked add the bread /roti's
    • stir fry for few mins

    Here starts the crucial part. to add the gravy or not. Well personally i prefer the gravy as it will add up to the dish. It also has most of the spice blends so it makes up for the excess quantity of the bread. Also the bread tends to be dry. Hence gravy adds to the texture of the dish.

    • Add the gravy.
    • Mix well. let it heat for some time.

    Now another decision to be taken if gravy is added that we want a dry dish or a liquid dish. 
    Well we say go for the semi gravy one. 
    • let all the water steam up and gone.
    • add 1 cup of Curd.
    • now heat up for a few mins
    • keep it mixing.
    • Let it dry up a bit.
    Its ready to fulfill your hunger now. Tastes so good that we fear anything would be left over or not.
